Mead according to own basic recipe, traditionally made in small batches. The difference with the Mild and Traditional is that the Rotterdam is made from the honey of our own bees. We have developed the recipe with the spoilt and adventurous wine drinker in mind. Our mead is not sweet, because the sugars in the honey are converted into alcohol. The same fermentation method is used to make wine from grapes. The alcohol content can vary between 10 and 13 percent, depending on the fermentation process. Batches made according to the same recipe can also differ in taste. The proceeds of each bottle of mead benefit the bees.
